And y’all ate it up.

And enough people asked for the recipe that I decided to make it official.

This recipe was originally discovered by yours truly on allrecipes.com the first winter we were married (2006) and it’s been a favorite ever since. I make it every year for a soup potluck at Jeff’s office and the Crock-Pot comes home scraped clean.

The recipe is unbelievably simple (When I rewrote the directions for you, I considered replacing the word “place” with “dump”, but that didn’t sound very ladylike.) and I don’t deviate too much from the original, but I do have a few pointers — check it out.


Crock-Pot Chicken Taco Soup


  • 1 onion, chopped {No one in my house will eat onions, so I use McCormick Minced Onions instead. Shh, don’t tell them.}
  • 1 (16oz) can chili beans
  • 1 (15oz) can black beans
  • 1 (15oz) can whole kernel corn, drained
  • 1 (8oz) can Mexican tomato sauce
  • 1 (12oz) can or bottle of beer {I’ve tried different brands over the years, but we never taste the difference. Use whatever you have.}
  • 2 (10oz) cans diced tomatoes with green chilies, undrained {I like to do one can of Rotel (with chilies) and one can of Hunts something or other (tomatoes only). And I like to pick something with some personality – like Fire Roasted with Garlic.}
  • 1 pkg taco seasoning {We don’t do spicy around here, but this is a place you could dial up the spice if you like. Me, I go for “Cheesy Taco”. That’s how I roll.}
  • 3 whole skinless, boneless chicken breasts {I’ve always suspected the chicken is what puts this soup over the top. Don’t skimp on the chicken.}

Also, when it comes time to shred the chicken, don’t be shy. Get a meat fork and a dinner fork and get after it. The better you shred the chicken, the more likely there’ll be chicken in every bite of soup.
